CRUNCHY ZOODLE SALAD


This is the best salad.  We’ve been making a big bowl to have with dinners each week since having a zoodle salad in NYC. We got a tool to make the ‘noodles’ at Crate & Barrel for about $15.  There is really no recipe involved in this, you can portion however you like.  I used one cucumber, one zucchini and a handful of shredded carrots, sliced almonds, red cabbage and snow peas. I use a little ginger dressing to top it off (but put the dressing on it per serving, not in the big batch because it gets a little soggy).  Perfect amount of crunch and also so refreshing for these hot summer days!
